About this recipe

Easy homemade strawberry wine recipe for one demijohn (1 gallon). Ripe fruit, sugar and patience, nothing clever. Best made when strawberries are cheap.

Ingredients

ripe strawberries1.8 kg
sugar1 kg
water4.5 l
acid blend1 tsp
wine tannin0.25 tsp
pectic enzyme1 tsp
campden tablet1
yeast nutrient1 tsp
sachet Lalvin 71B1

Method

Hull the strawberries and freeze overnight, then thaw and mash in a sterilised bucket

Dissolve the sugar in hot water, cool, and pour over the fruit

Add the acid blend, tannin, pectic enzyme and a crushed campden tablet, cover and leave 24 hours

Add the yeast and nutrient

Ferment 5 to 7 days, stirring daily

Strain into a demijohn, top up to 4.5 litres and fit an airlock

Ferment out for 2 to 5 weeks

Rack off the sediment

Age at least 6 months before drinking

Brewer's notes

Strawberry promises more than it delivers, so use the ripest fruit you can find, the sort that is a day away from going soft. Freezing it first breaks the fruit down and gets far more juice out. Fair warning, the colour starts a glorious red and fades towards pink as it ages. That is normal, not a fault. It ferments dry with 71B; sweeten at bottling if that is not your thing.
